Broke-Ass Kitchen: Huevos Rancheros

Huevos Rancheros. In restaurants, it’s the brunch dish I have yet to pronounce with obvious hesitation. At home, it’s a way for me to eat nachos for breakfast without feeling like some kind of man child. But in both instances, it’s always one of the best decisions I’ve made all day. Here’s my favorite version, which just so happens to also be the easiest and cheapest to make! OK, that’s definitely why it’s my favorite but whatever, enjoy.

Broke-Ass Kitchen: Huevos Rancheros

Ingredients: (Per serving) 1 egg, 1/2 cup black beans, 1/4 cup cheese, 8 tortilla chips For preference: lettuce, salsa, hot sauce, black olives, jalapeno peppers, etc… you get the idea.
Cost: Around $3 per serving
Time: Around 10 minutes
Soundtrack: Tom Petty and the Heartbreakers – Damn the Torpedoes 
The plan: Heat a skillet over medium heat. After a few minutes, coat it with oil or nonstick spray, swirling it around to make sure the bottom is well-covered. After a few minutes crack and slowly drop your egg onto the hot pan and let sit and cook until the whites are set and the sides start to curl up. In another pan (or if using a large one feel free to use the same), cook the black beans for a few minutes until warm. Spread tortilla chips out onto a plate if you want to make this dish nacho-style, then top with black beans with cheese and any other food flair you want–salsa, hot sauce, lettuce, sour cream, etc–the drop the fried egg on top. Salt and pepper to taste. Enjoyos Youros Huevos Rancheros! Which is Spanish for “I clearly never took Spanish.”
