Broke-Ass Kitchen: White Bean Dip

For me, this recipe is kind of like the bottle of Trader Joe’s wine you always keep stashed under your bed in case of hosting/party guest/shitty day emergencies. (If you don’t do that, start doing that!). It was basically born from a day when I needed a dip and had nothing but white beans and some meager embellishments on hand, in true 20-something style. The basic–and embarrassingly easy–outline is below but shit can get delicious when you start throwing in different twists. I personally love it with pureed avocado, ground coriander or nutmeg (notice the OR, not AND) but add your own flair and make this dip your very own.

Broke-Ass Kitchen: White Bean Dip
Ingredients: I can of Cannellini beans (drained), 1/3 cup parmesan cheese, 3 tbs olive oil, 2 tbs garlic salt, 1 tbs salt and pepper, 1 tbs fresh squeezed lemon juice.
Cost: $5, tops.
Time: 5 minutes, tops.
Soundtrack: The War on Drugs – Slave Ambient 
The Plan: Puree the beans in a food processor or blender (or just smash up really good with your super strength!) with the cheese, olive oil, lemon juice, and anything else you feel like throwing in. Next, add the seasons to taste and then OH SNAP you’re done. Reward yourself with some dip for all that you’ve accomplished in under 5 minutes.
