Broke-Ass Mom Leftover Chicken Ideas
A couple of months ago, I wrote an article about how you can make all Broke-Ass moms proud across the world with my simple recipe for Chicken Broth. If you haven’t read it, read it here.
But today I realized that using the contents of your refrigerator plus leftovers from dinners the night before is also a great, and challenging way to be Broke-Ass. At 3pm this afternoon I looked in the fridge to try and figure out what we were going to have for dinner. I found the following when I opened the door:
- Carrots
- Celery
- One onion
- Thyme
- Cooked chicken from two different dinners
- Chicken broth
It suddenly occurred to me I could make a kick ass Chicken Pot Pie, and I’ve already saved myself the trouble of having to cook the chicken first. By 5pm I had a complete Chicken Pot Pie dinner.
If for some crazy reason, you don’t like Chicken Pot Pie, here are some other ideas about how to use leftover chicken.
- Chicken and Pasta (just add some tomato sauce and maybe a few veggies)
- Chicken Noodle Soup
- Chicken Sandwiches (either make chicken salad with mayo and celery, or the way we like it is with BBQ sauce on toasted bread)
- Chicken Enchiladas
Buy a roast chicken either already prepared (sometimes they are only $7.99 for a full rotisserie chicken), or make one yourself. Then make all sorts of delicious dinners on the days to follow with the leftovers. You’ll look like a superstar. Just smile and pretend that you slaved all day over a hot stove with a crying toddler.
